Cake for breakfast? Yes!
And its done in only a few minutes too!
Breakfast Cake with Banana and Walnut
2 tbsp rolled oats or millet
1 tbsp brown rice flour
1 tbsp walnuts
1 tsp cinnamon
1 pinch of baking powder
Put some of the banana and walnuts aside for decoration. Put all the other ingriediënts in a small food processor and blend until combined. Transfer the mixute to a small bowl or glass (microwave proof). Put it in the microwave at full power for 2 minutes. Check if the mixture is done, if not, put it back for a little longer.
Transfer the cake to a platter, dust it with cinnamon and decorate it with the leftover banana and walnuts. If preferd, you can add some rice or maple syrop. Enjoy breakfast!
