These cookies are super quick and easy, you just mix everything together and that’s it! Two cookies stay within the amount of allowed FODMAP’s.
Oat Cookies with Cranberry and Lemon
100 gram rolled oats
45 gram cranberries
rasp of 1 lemon
1 teaspoon cinnamon
pinch of salt
2 tablespoons melted coconut oil (or another type of oil or butter)
3 tablespoons of rice syrup (or golden syrup or maple syrup)
2 tablespoons water
Heat the oven at 200 degrees. Mix all the dry ingriedients togheter in a bowl. In a seperate bowl, mix all the wet ingriedients. Add the wet mixture to the dry ingriedients, and mix until well combined. Let the mixure stand for a few minutes, to let the oats soak up the wet ingriedients.
Make 10 piles of cookies on a baking tray with the use of a tablespoon. Bake in the oven for 10 minutes.
