Greek Rice Salad

This easy salad is perfect for a simple lunch, dinner or picnic! You only have to cook the rice, cut the vegetables and mix everything toghether.

Greek Rice Salad (serves 2)

Ingriedients:
1 cup of rice, cooked and cooled down
1 cucumber, cut in cubes
1 (yellow) sweet pepper, cut in small pieces
10 small / 400 gram tomatoes, cut in  quarters
1 can (170 gr) of black olives, halved
100 gram of feta cheese, crumbled

Dressing:
3 tablespoons of olive oil

1 tablespoon apple cider vinegar (or other vinegar / balsamic)
salt and pepper
mixed dried herbs, italian

Cook the rice and let it cool down. Mix all the ingriedients for the dressing in a small bowl. Add salt, pepper and mixed herbs to taste. Mix the rice, cucumber, sweet pepper, tomatoes, olives, and the dressing in a large bowl. Crumble the feta over the salad, and spinkle the mixed dried herbs on top.
