This vegetarian salad nicoise is close to the classic, but with addition of lentils. Lentis are are cheap, very healthy and a small amount is allowed on the low FODMAP diet!
Lentil Salad Nicoise (4 persons)
500 gram baby potatoes
240 gram (1 can) lentils, rinsed
200g grams green beans
100 grams cherry tomatoes
100 grams raddishes (optional)
100 gram black olives (missing in the picture 😉 )
3 tablespoons olive oil
1 tablespoon apple cider vinegar
1/2-1 tablespoon of mustard
salt en black pepper
– Boil the potatoes en green beans. Drain and let them cool.
– Boil the eggs to preferance- Drain en rinse the lentils thouroughly
– Mix all the ingredients for the dressing in a small bowl
– Cut the potatoes, tomatoes, raddishes and olives in halves. Assemble all the ingriedients for the salad in a large bowl or plate. Drizzle over the dressing.
– Serve and enjoy!
(make the salad vegan by switching the egg for tofu)
